Golden Marinated Cauliflower Steaks with Black Paste Vinaigrette and Smashed Pumpkin

Quantity – For 2 people

Preparation Time – 45 minutes

  • Half à cauliflower

Golden Marinade

  • 20g tahini
  • Juice of ½ à lemon
  • 20g olive oil
  • 2 spoons of warm water
  • 20g of miso paste
  • 20g Golden paste


Black Paste Vinaigrette

  • 1 soup spoon of Black paste
  • 4 soup spoons of warm water
  • 2 soup spoons of tahini
  • 3 soup spoons of soy sauce reduced in salt


Smashed Pumpkin

    • 300g pumpkin of your choice
    • 2 garlic cloves
    • olive oil
    • salt and pepper


  1. Cut the cauliflower into large steaks of 1,5-2 cm of thickness
  2. bring à large pot of salty water to boil and once boiling, add the cauliflower for 2 minutes
  3. Cool down with cold water or ice cubes
  4. Put aside


Golden Marinade

  1. Combine all ingredients and whisk well
  2. Pour the marinade over the cauliflower steaks (both sides)


Black vinaigrette

  1. Whisk all ingredients together until à homogenous and smooth texture (adjust seasoning if need be)


Smashed Pumpkin

  1. Cut the pumpkin into large pieces, marinade with olive oil, salt and pepper
  2. Peel garlic, squash and cut it and place the pieces on top of the pieces of pumpkin
  3. Cook in the oven at 180 degrees until tender
  4. Once cook, remove garlic cloves and the pumpkin skin and smash well with à whisk, adding olive oil if necessary, until à smooth texture


Serve with the seaweed salad and yoghurt
