The story of an encounter
With the aim of establishing alternative specialty lattes in Paris, on par with specialty coffees.
La Main Noire began with a meeting in Melbourne (in 2014), where the coffee shop culture is fully experienced: good coffee, drinks that have taste and that attention to detail that changes everything.
Three friends meet there, travel, learn, then find themselves in Paris with a clear idea: to create a coffee shop inspired by this Australian spirit, Parisian version, with real artisanal gestures and a desire to build hand in hand.
La Main Noire is also a tribute to all the hands that participate in the creation of a drink, from latte to specialty coffee: producers, roasters, artisans, baristas.
Each cup tells the story of a collective effort, from sourcing the ingredients to serving them in the coffee shop.
Even before the coffee shop opened, the first recipes were developed. Sticky Chai was launched in early 2017, followed by Paste, concentrated latte bases made in Paris.
Textured, intense, and complex, they were designed to elevate alternative lattes to the exacting standards of specialty coffee shops. All this without using syrups or powders that are often overly processed and sweet.
In 2023, the little sister arrives: La Fabrique à Latte, a powder version inspired by Paste, always with the same requirement on the quality of ingredients, Organic and 100% natural, and on artisanal manufacturing.
Since 2025, all La Fabrique à Latte products are also available for individuals, to bring the coffee shop experience home, without any hassle.

We change our menu regularly to respect the rhythm of the seasons and work with ingredients at their freshest. This also allows us to remain creative, explore new combinations, and offer increasingly refined and inspired recipes.

Our menu is constantly evolving, but we always make sure to include recipes suitable for different dietary needs, without compromising on taste or the quality of ingredients.

All our dishes are homemade, prepared on-site using carefully selected ingredients. We prioritize fresh, seasonal produce to preserve the quality and trueness of the flavors.
We also incorporate our La Main Noire Pastes into some recipes, to bring a unique aromatic signature.
We offer a selection of specialty coffees that is renewed every two months. We collaborate with micro-roasters based in France and across Europe, favoring partners committed to a demanding approach to quality.
Each coffee is rigorously selected through tasting sessions (cupping). We systematically work with a single origin for espresso, another for filter coffee, as well as a blend specifically designed for milk-based drinks.
All of our La Main Noire Lattes are of course available in all their forms: hot, iced, frappés, as well as in signature creations.
