Black Paste

  • Asian marinades for fish, meats and vegetables
  • Pastries, cookies, cakes etc
  • Base of asian style sauces (coriandre, lemongrass, chilli etc)
  • Salade vinaigrettes

Golden Paste

  • Seasoning soup, stir fry, curry, dahl etc
  • Using as à base for sauces
  • Marinades for seafood, poultry and vegetables
  • Tempura or frying batter
  • Cocktails with rum, kahlua, coconut milk, exotic fruits
  • Glazes for pastries and cakes

Raw Cacao Paste et Spiced Raw Cacao Paste

  • Use in pastry or cakes as, for example – as a replacement of chocolate pieces
  • To make à coulis, for using on pancakes, granola, waffles and other desserts
  • To replace dark chocolate in savoury dishes

Green Paste

  • In pastries as a replacement for matcha
  • To use in japanese style marinades for seafood and vegetables, works very well with seaweed, spinach etc
  • Yoghurt and fruit smoothies
  • Cocktails; gin, vodka, basil and lime

Sticky Chai

  • Seasoning sauces
  • Poaching syrups for fruit
  • To add flavour to milk for granola, cereal, french toast etc
  • Flavouring vinaigrettes and marinades
  • Pastry – Infusing in butter or other fats to add to general recipes

RECIPE EXAMPLE

Black Paste Asian Vinaigrette

 

  • 1 teaspoon of black paste
  • 2 teaspoons of hot water
  • 1 tablespoon of soya sauce
  • 1 teaspoon of sesame oil
  • Chopped Coriandre, chilli, lemongrass
  • Juice of half lime

Mix all ingredients together and use either to marinade, or to serve with vegetables, fish or poultry.
